NATURAL DARK BROWN COCOA
Natural cocoa powder is a type of cocoa powder that doesn't have any other mixtures, we usually find it on the market. Since cocoa beans have no admixtures, they are only processed for fat separation and milling. As we know the taste of cocoa powder is bitter. The taste is fruity, complex, bitter and moderately sour. suitable for use in making cakes that require baking soda.
DARK BROWN COCOA
Dark brown cocoa powder or also known as Dutch-Processed cocoa powder which goes through a Dutch Process sometimes called "Dutching" which involves soaking the cocoa beans in an alkaline solution, resulting in a darker brown powder with a chemically neutral pH between 6.8 and 8.1, produces a milder taste. Dutching also reduces the antioxidant properties of cocoa.
